Another quick recipe before I go to work – it’s currently horribly windy, not quite cold enough for a big coat but too cold for a jumper, and drizzling that annoying heavy-but-light drizzle that makes it hard to look forward and also makes you look stupid for putting an umbrella up because it’s only drizzle. So I’m staying inside and pretending it’s Summer by making this salad.
This was an amalgamation of all the leftover shit in the fridge/cupboard but it was so photogenic I thought I’d give a recipe for it – the combination of really ripe avocado + butterbeans + lemon + tahini = instant winner. The sliced shallot and rocket added some crunch to the otherwise a-bit-mushy salad, and the olives added to the Summer vibe I was aiming for. As with every salad, I added some toasted mixed seeds because I’m yet to encounter a salad that doesn’t benefit from them, but it would have been equally satisfying without them. Eat with shades on for maximum Summer vibes.
(I did this for about 2 minutes and felt stupid so I took them off, but having them next to me was good enough)
Avocado, butterbean and rocket salad – makes enough for 2, or 3 as a side
1 ripe avocado, diced into chunks
1 tin of butterbeans
1 shallot, sliced into half-moons
A handful of olives
A handful of rocket
Juice of half a lemon
1 tbsp extra virgin olive oil
A drizzle of tahini
Seasoning, to taste
Small handful of coriander
A small handful of mixed seeds
- Drain and rinse the butterbeans and put into a mixing bowl. Add the avocado, olives, rocket and sliced shallot.
- Toast the seeds on medium/high heat until they pop.
- In a separate bowl, whisk together the olive oil, lemon juice, coriander and seasoning.
- Pour the dressing into the bowl and toss everything to coat and mix.
- serve onto plates and sprinkle with the toasted seeds.
- Drizzle on the tahini.
- Picture yourself eating on a deck chair.
Note: goes very well with a poached egg on top, or on the side of a BBQ meat of some sort (it’s still January so I don’t know this as a fact, I’m just imagining it is as I sit with a blanket watching Storage Hunters and praying that the rain stops before I have to leave the house for work).
